This time on yeast lees in bottle helps create delicate fine bubbles, but also adds the creamy texture to the wine. A great méthode wine should have relatively little definitive fruit flavours, but more savoury characters, think almond meal, brioche, even “white toast with honey” flavours, with very fine foam (bubbles) that are consistent and persistent in the glass, finishing with crisp acidity and refreshing mouthfeel (that makes you want another sip!).
Vineyards and Winemaking
This Méthode Traditionelle is a Marlborough blend making the most of the 2016 vintage conditions, and enabling the inclusion of the highest quality parcels of fruit. The picturesque Higgins Road vineyard is perched on the southern banks of the rugged Awatere River in Marlborough, whereas the Chaytors and Fowke vineyards are on sheltered early ripening sites in the Wairau valley. All vineyards have vines trained to VSP trellising with careful canopy and yield management implemented to promote early ripening, specifically targeting méthode traditionnelle production.
